Challenges
For Bister (the company that initiated the project), the network of farmers of the Farm For Good cooperative and the other companies involved, establishing a new organic mustard sector in Wallonia meant optimising cultivation practices to achieve the high yields needed and understanding the processing stages to guarantee a mustard whose organoleptic and microbiological quality would curry favour with consumers.
UCLouvain’s contribution
Promoting and encouraging local and organic farming is an important ecological and economic issue. By pooling the expertise of the FERM (cultivation practices) and CICN (organoleptic quality of the end product) platforms, UCLouvain was able to make a significant contribution to the development of a new organic mustard sector in Wallonia. The resulting high yields and quality production have consistently met consumer expectations.
